LONG-SIMMERED BEEF

The beef in this dish is fried, boiled and then simmered with flavouring until it is almost a savoury jelly.

Ingredients:

2.25kg of shin of beef

4 tablespoons of vegetable oil

2 tablespoons caster sugar

3 tablespoons soy sauce

4 tablespoons dry sherry

1 tablespoon dried tangerine or orange peel, soaked and drained

3 tablespoons finely chopped onion, or 6 spring onions

2 teaspoons chopped fresh root ginger

Method:

Trim the beef and cut into 2.5cm cubes.  Stir fry in the oil for 4-5 minutes over medium heat.  Drain the meat, add to a pan of boiling water and boil for 3 minutes.  Remove the meat and drain.  Place the beef in a heavy saucepan and barely cover with fresh cold water.  Add the sugar, soy sauce, dry sherry, tangerine peel, onion and ginger.  Lower the heat as far as possible and simmer, tightly covered, for 4 hours.  Stir the contents of the pan once each hour.  Transfer to a heated dish before serving.
